Breakfast Egg Muffin

Excellent recipe for a quick grab & go to work or for the kids at school. This recipe is really practical for people who don’t have time in the morning because you just make a big batch on Saturday & all you need to do is reheat it!

What you need is:

  • Muffin or Cupcake tin
  • Eggs
  • Oil or Grapeseed oil
  • Any veggies you like (I used mushrooms, onions & red peppers)
  • Baking powder **Optional

Directions:

*Preheat your oven to 180 degrees 15 mins before prep time.

*Grease your muffin tin with a little bit of oil.

*Beat 6-8 eggs in a large bowl, Mix in the veggies, Salt & pepper to taste + Pinch of baking powder.

*Bake for 20-25 mins.

Pro Tip: Bake for the week & store them in glass containers.
